Mediterranean Tuna and Corn Salad With Lemon Dressing
Ingredients:
Salad
- 1 medium red onion, thinly sliced
- 1 medium cucumber, thinly sliced
- 1 large red bell pepper, cubed
- 1 cup red cherry tomatoes, halved
- ½ cup pitted black olives, halved
- ½ cup whole kernel corn
- 3 tablespoons capers
- 1 185g Gold Seas Tuna Chunks in Herb and Garlic
- 1 large lettuce, chopped
- ½ cup fresh basil leaves
Lemon Dressing
- ½ cup olive oil
- 6 tablespoons lemon juice
- 4 teaspoons grated lemon zest
- 2 cloves garlic, grated
- 2 teaspoons honey
- Salt and pepper to taste
Procedure:
- Prepare the dressing. Combine all ingredients in a small jar, cover with lid, and shake until ingredients are well blended and creamy. Refrigerate until ready to use.
- Combine and toss salad ingredients together in a large bowl.
- Divide and transfer among individual plates and serve with lemon dressing.

Golden Tip: For a heartier meal, add coarsely chopped walnuts and crumbled feta cheese.
